Rice
Ingredients
- 2 cups uncooked baldo rice
- 1 tsp olive oil
- 4 cups water
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
Rinsing
- Put rice directly into the pot.
- Fill with cold water.
- Swirl rice around with your hand.
- Carefully pour out the cloudy water.
- Repeat 2-3 times.
Cooking

Drain the rice well.

Heat 1 tsp olive oil in the pot over medium heat.

Add the rice.

Toast for 2-3 minutes, stirring occasionally.

Add:
- 4 cups water
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp black pepper

Bring to a boil.

Cover and reduce heat to low.

Cook for 15-18 minutes.

Turn heat off.

Let rest covered for 10 minutes.

Fluff with a fork.
Yield:
- About 6 cups cooked rice.
Cinnamon Sweet Potatoes
Ingredients
- 4 sweet potatoes (~880 calories total)
- 2 tsp olive oil
- 2 tsp cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
Cooking
- Cut into large wedges.
- Toss with olive oil, cinnamon, salt, and black pepper.
- Spread onto a baking sheet.
- Bake for 35-40 minutes.
- Flip halfway through.
When they come out:
- Add a light sprinkle of cinnamon if desired.
- Let cool for 5 minutes.
Ground Beef
Pan Size
For ~3 lb of ground beef, use:
- A large sauté pan with high sides, or
- A Dutch oven
If your pan feels crowded, cook in 2 batches.
Ingredients
- ~3 lb 93/7 ground beef
- 1 large onion
- 1 bell pepper
Seasoning Mix
- 1 tbsp garlic powder
- 2 tsp onion powder
- 1 tbsp paprika
- 2 tsp black pepper
- 2 tsp oregano
- 1 1/2 tsp cumin
- 2 tsp salt
Cooking
- Heat your largest pan over medium-high heat.
- Add onion and bell pepper.
- Cook for 4-5 minutes.
- Add ground beef.
- Break apart with a spatula.
- Add seasonings.
- Cook until browned.
Drain Fat
- Turn heat off.
- Let fat collect on one side.
- Carefully pour into a disposable container.
- Let cool.
- Throw away.
- Return beef to heat for 1 minute and stir.
Taste and add more salt if needed.
Final Yield
- ~3 lb seasoned ground beef
- ~6 cups seasoned baldo rice
- 4 cinnamon roasted sweet potatoes
Enough for several lunches and dinners with very little active cooking time.
